For this bar we chose not to use a mint extract. This bar contains only three ingredients; organic cane sugar, organic cacao, and flavouful dried mint from Foggy River Farm. It was difficult to choose the mint, as Foggy River Farm, our local resource for herbs, teas and botanicals, grow 9 kinds of mint! We settled on a Swiss mint which delivers the just the right amount of menthol to complement the slight fruitiness of the chocolate. If you are a mint chocolate lover, you'll love this bar!
